Okay, so I dug into my Pottermore folder and found that Minerva indeed stopped playing Quidditch upon finishing Hogwarts, so, no, she was never a professional player.

Jun 3, 2015 · Lupin, Tonks, Professor McGonagall and Madam Pomfrey were told that Snape killed Dumbledore at the end of Half-Blood Prince. Hermione and the Weasleys were in the ward, so learnt at the same time. Since Snape stunned Flitwick, he would have guessed as well.
