Preheat your oven to 175°C / 350°F, but keep the fan off. In the meantime, grease a 9x13-inch (22x33 cm) pan or line it with parchment paper so it is easy to remove later.
Place lemon zest and 1 Tbsp. Diamond Crystal or 1¾ tsp. Morton kosher salt on a large rimmed baking sheet; rub salt into zest aggressively until salt is pale yellow and fragrant.
