Okra has a chance to shine alongside a hearty salad blend made up of pearl couscous, cherry tomatoes, and arugula.
Add the chilled couscous, tomatoes, feta, parsley, lemon zest and juice, the remaining 3 tablespoons of olive oil, the remaining 1/4 teaspoon of salt and the pepper. Toss gently to combine, and serve.
Couscous is delicious served warm or at room temperature and is a hearty base for salads. Top with cooked chicken, feta cheese or roasted vegetables.
